"One of Marin's earliest agricultural manufacturing was cheese. In 1926 Marin County was the second largets producer of cheese in the state. The Marin French Cheese Company has produced artisan cheeses in the same location outside of Novato since 1865, and is the oldest continuously operating cheese factory in the United States. The Thompson family began making and selling fresh cheese to the saloons where it was served to primarily European doc workers at Yerba Buena Cove as a substitute for pickled eggs in the short supply at the time. The cheese was transported by horse and wagon to the Petaluma River and then taken by the steamer across the bay to San Francisco.
