A hacienda (center) and pulqueria surrounded by a large agave farm not far from Mexico City. Maguey (agave), used to make the fermented beverage, pulque, was one of the most sacred and important plants in ancient Mexico and had a privileged place in mythology, religious rituals and the Meso-American economy. During the colonial period, large haciendas, like the one seen here, generated significant revenue from the making of pulque. Each pulqueria had its own name, decor, traditions, drinks and songs.
