Photograph was edited for publication purposes
Photograph caption dated February 8, 1961 reads "George Lim shows Mrs. Jack Rogers of Woodland Hills how to slice vegetables and meats in true Cantonese manner. The large chopping block, vegetable-cutting knives and cleavers of varying sizes are used. Sharp, heavy knives are used so the weight of the metal will do most of the work, rather than the strength of the person used on a small, light knife."
