Description
Peaches are being dipped in what is probably a boiling ascorbic acid mixture which would preserve the color of the fruit. Steam can be seen rising from the tub. The peach halves were laid onto wire screens that were framed and could be stacked as are those in front of the children. The frames would then be transported to an open area where each frame would be laid out on the ground. Daily the fruit was turned until it was dry.
