Note: Als Nr. 61 publiziert im Album 'Achtzig Ansichten von der Goldküste (Westafrika) nach Originalaufnahmen des Missionars Fritz Ramseyer', Neuenburg 1895. (RI). - Bildlegende im Album: "Unsere Hausmädchen beim Zurichten ihrer Mahlzeit. - Der 'Fufu', die Nationalspeise unserer Neger, wird aus Pisang (einer Art Banana) oder aus Yams (einer grossen wie Kartoffel schmeckenden Wurzel) bereitet. Pisang oder Yams werden gesotten und in hölzernen Mörsern gestampft, während zugleich ein drittes Mädchen den Teig auf geschickte Weise umwendet und dann in schwarzen Schüsseln als zweifaustgrosse Kugeln mit einer Pfeffersuppe aufgetischt wird. Dieser 'Fufu' wird mit den Fingern zum Munde geführt. Eine sehr schmackhafte Fufusuppe wird auch aus Palmnüssen oder Erdnüssen bereitet sonst aber werden Fische, Wildpret oder Schnecken dazu verwendet." (RI). - Caption in the album: "Our housemaids preparing their meal. - 'Fufu', the national dish of our Africans, is made from plantain (a sort of banana) or yams (a large root which tastes like potatoes). Plantains or yams are cooked, and pounded in wooden mortars. A third girl turns the mass with great skill. Fufu is served in black bowls as lumps about the size of two fists, with a pepper soup. People use their fingers to eat it. A very tasty soup for fufu is also made from palm-nuts or ground-nuts. Fish, game or snails are also used to make the soup." - Contradictory data: (D-30-0,1) gives Missionary Piton as photographer. (PST).- But Piton was a China missionary. He probably received copies of photographs from Ghana which he later handed over to the archive (PJ 04.2001).
