Photo--black and white: The Lyons-Magnus Maraschino Cherry processing plant in Sebastopol where huge cherry barrels were filled with many tons of Royal Anne and Bing cherries. The cherries spent six weeks immersed in chemical brine until they were colorless and tasteless whereupon Lyons-Magnus's San Francisco plant adds taste and color back to make maraschino sundae toppers.
