Wine is produced by fermenting crushed grapes using various types of yeast, which consume the sugars found in the grapes and convert them into alcohol. Fermentation may be done in stainless steel tanks, open wooden vats, inside wine barrels, as well as inside the wine bottle itself; the temperature, speed and levels of oxygen present are all important considerations in winemaking. Cucamonga Winery, built in 1835 and often called "California's oldest winery", claims to be the original winery of the district containing the Cucamonga name, and produces only table wines, one of the few in the district to do so.
