"This work stands as the first provincial cookbook printed in Mexico, predating the Manual del Cocinero y Cocinera, also printed in Puebla, by some five years. The folding plate ... depicts carving techniques of various fishes and fowl. The recipes are a mix of European and Mexican dishes (including staples such as tortillas de maiz), with a full selection of rich pastries and desserts (buñuelos, rosquillas de almendra, all manner of pasteles, conservas, etc.) Volume two includes a 'Manual de Licores' with directions on how to make such drinks as 'aceite de venus, ' crema de cacao, horchata, cafe con aguardiente, and more ... The book ends with a ... list of subscribers arranged by town and sex."--Antiquarian bookseller's blurb.
