Description
The tripeptide glutathione is an important component of grape berries that has several physiological roles and can influence must browning. We previously reported that there is a large increase in berry glutathione that coincides with the beginning of ripening. The work reported here was undertaken to characterize the glutathione balance in leaves and berries in order to determine the contribution that leaves might make to the increase in berry glutathione. Prior to the onset of ripening, 79 of the glutathione was found in the leaves, and 21 was found in the berries. After the onset, 25 was found in the leaves and 75 in the berries. The decrease in leaf glutathione concomitant with the increase in berries indicates that leaves could be an important source ofberry glutathione at the onset of ripening.
